Honey Walnut Shrimp

½ cup walnuts
1 lb raw large shrimp, peeled, tailed and deveined
4 egg whites
2/3 cup mochiko flour (
sweet rice flour)
Avocado oil for frying
½ cup mayonnaise

¼ cup honey
2 Tbsp sweetened condensed milk
2 cups honeydew balled with melon baller (optional)
Cooked white rice

Over medium low heat, toast the nuts. Set aside.
Whip egg whites in a medium bowl until just foamy. Stir in the rice flour until it has a pasty consistency. Heat the oil in a heavy deep skillet over medium-high heat. Stir shrimp into the flour/egg mixture. In cast iron pan, heat about 1 inch of oil until hot. Add shrimp one at a time and fry until golden brown, 3-5 minutes. Remove with a slotted spoon and drain on paper towels.
In a medium serving bowl, stir together the mayonnaise, honey, and sweetened condensed milk. Add shrimp and toss to coat with the sauce. Sprinkle the nuts on top and honeydew balls (optional) and serve with white rice.
